Gretchen's Mini Fruit Rum Cake

These cakes were ordered by an American bride who married a Jamaican. She had a small wedding months previously but decided to sent these out to family and friends. She told me the story how her mother in law said she was not sure there was a wedding because she didn't taste any rum cake...(lol) Typically Jamaican isn't it. We must have a rum fruit cake at our special celebration. it is part of our english culture.

These mini cakes can be very versatile as they can be used as a favor for guest at weddings, Christening, baptism, or for any other event where favors are given. They could also be the dessert for the guests. Most times people do not want to eat them becsuse they are too pretty.
